beetroot & chickpea burgers
1 large beetroot, finely grated
1 tin chickpeas, drained and mashed
clove of garlic, minced
good handful of parsley, chopped
half cup oats (quick oats or rolled oats whizzed in a food processor)
salt and pepper
combine all ingredients in a mixing bowl and let sit for half an hour so the oats can absorb any liquid and the patties will hold together. if the mixture is too loose, add some more oats
shape the mixture into patties and bake on baking paper for around 30 minutes
serve on the bun of your choice with relish, avocado, alfalfa and lettuce fresh from the garden
